So my banana muffins turned out pretty good. Hunger tested and coworker approved! I thought they tasted pretty good and my coworkers confirmed....unless they were just being nice which is 100% possible but then you can blame them and not me if you try this recipe. Another benefit was that they did keep me pretty full until lunch so I didn't eat hostess cupcakes all morning.
Protein Chocolate Chip Banana Muffins
Servings 6 muffins
Calories per serving: approximately 185
5 tablespoons vanilla protein powder
5/8 cup flour
1.5 tablespoons sugar
1/4 cup applesauce
1 tsp vanilla extract
1 tsp baking powder
sprinkle of baking soda
1 tsp salt
~1/4 cup water (add this last and use more or less to get the batter to be the right consistency)
Sprinkle of chocolate chips :)
1. Mix the dry ingredients together and mix the wet ingredients together. Then combine. Add about 1/4 cup water until batter is right consistency. Then mix in a few chocolate chips.
2. Scoop batter into muffin tin
3. Bake on 325 for 13-17 minutes
I always loved this recipe in College for two big reasons, it was simple ingredients and I could easily adjust it based off how many brown bananas I had. Hope you enjoy as well :)
